I SHOULD HAVE NOT!

WATCHED that animal program where they had to put a 7 year dog -a female boxer- to sleep due to a spinal tumor. Her limbs were wobbling when she tries to walk and obviously in pain. The owner had 2 options, let the vets perform a surgery but it would serve futile because she’ll be numb from waist down and no longer can walk OR 2nd option was to put her down. The family/owner opted for the later. The part where they were saying goodbye to the dog was really moving, my eyes got teary. For me, it felt like losing a family member. Until his last moment the dog never complained and jolly… and while watching all that,I held Charlie my pug tight, hoping it would never happen to us because I might not have the strength.

- to take the dog’s face off my mind , let me just share with you one of my favorite winter recipes.
Thai Basil Minced Pork or Beef

Ingredients:

- 1 pound minced beef or pork ( fat optional )
- 3-5 cloves garlic
- 2 sliced onion
- fresh basil (laurel) leaves chopped or whole
- red chillies/peppers chopped or whole
- 1 teaspoon lemon juice
- fish sauce
- teaspoon or white sugar
- 2 tablespoon of oil

This is rather a very simple recipe. Heat up a wok or pan, add oil and stir fry garlic and onion until they cooked, don’t let them turn brown. Stir add the chillies, let it cook for about a minute. Add minced pork and stir fry until cooked through, then add lemon juice and sugar. Reduce to low heat. Add basil and fish sauce, stir thoroughly.

This is perfect with pandan rice. Chillies provide the extra warmth during winter time. My friends back in thailand use this as pulutan, also goes well with chilled beer.
