It’s almost Christmas!

We have few more days before Christmas and I still haven’t found recipes for my two Christmas evening dinners!

Could it be because I’m not really feeling Christmasy this year? I need to snap out of this Bah-Humbug! mood and get crackin’! I need to hold my cookbooks and find me 6 courses, 3 for first Christmas evening and of course 3 for Boxing day.

What do you think of salmon or duck breast fillet? I need to find good recipes , fast! How about you, your Christmas spread already been taken care of?

The cataract operation of my father in law went well. He did not feel any pain, during and after the minor surgery making me and most of all,  my husband happy. I guess among us three, my father in law is the most laid back and relaxed right now while my husband and I are just working hard. All work and no play.  Husband and I take turn taking care of my father in law. He needs his eye drops 4 times/daily. Luckily my father in law has enrolled himself many years ago to an organization that specializes with situation such as his. This organization sends volunteers and nurses to old people who can no longer take care of themselves. In my dad in law’s case, a nurse comes by few times a day to administer his eye drops. That already is a tremendous help for my husband and I since doing it 4x/daily was quite heavy. Aside from the nurse’s visits, my husband and I also take turns taking care of the old man’s needs. Usually I come by during lunchtime to prepare his food while my husband comes by 2-3x daily for the rest of his needs. I am not really looking forward to January as my husband has to travel to the US again for business purposes. But what can I do? Dad in law is experiencing his second childhood now so handling him right is a must. Also he is so forgetful and easily gets nervous. I am getting nervous sometimes too, but also getting better in understanding his status.

That explains why I hardly update my blog/s these days.

Oh man, I need a breaaaaak!!

    Of course I think salmon is a great choice, but the again I’m a Norwegian :-)
